Palm Oil Free Treats - 10. Lemon Drizzle

The worst thing for many consumer-level palm oil activists is not just the fact that basic products contain it, but also that those rare indulgences are now a thing of the past with palm oil found (but listed as vegetable oil) in all kinds of treats including chocolate, sweets, ice cream and numerous types of biscuit. So, at A-Z Animals we have prepared a number of palm oil free recipes for you to enjoy!
Ingredients
225g softened butter
225g caster sugar
225g self raising flour
4 eggs
grated zest of 1 lemon
juice 1 1/2 lemons
85g caster sugar
Cooking
- Preheat the oven to 180 °C/350 °F/gas mark 4. Grease and line a cake tin.
- Beat butter and sugar together in a bowl until the mixture is smooth and combined.
- Add the eggs and the lemon zest and mix well.
- Stir in half of the flour, combine the mixture and stir in the remaining flour.
- Bake in the oven for 45 - 50 minutes until the top is firm to the touch and slightly springy.
- Mix the lemon juice and extra sugar together before pouring over the top of the cake (whilst still warm).
- Leave to cool in the cake tin before transferring to a wire rack. It can be kept for a few days in an airtight container.
